Avvoltore is the most representative wine of the company, harvested from the vineyards planted on the hill of the same name, Poggio dell'Avvoltore. The clay/limestone soil of this estate results in strong, powerful tannins in the glass. The first vintage was created in 1988. Since then, the blend has undergone very few changes featuring Sangiovese, Cabernet Sauvignon and Syrah. The name refers to the falcon of Maremma, a bird of prey often seen flying over these vineyards.

The powerful tannin cleanses the palate well when paired with stewed meats and aged, flavorful cheeses.
